07Simple Recipes Using Curry Powder and Turmeric

Here is a simple recipe that resurrects the maligned baked white potato back into the health food category, and gives you a healthy dose of brain food to boot.
This is also a perfect recipe if you are one of the millions that are cooking for just one person.
This is based on the idea of a dipping oil that many use for french bread or toast.
The main ingredient – one baked white potato
The Dip:
1 clove garlic, minced
1 sm wedge of onion, finely chopped
(hint: to develop the phyto-nutrients in both onion and garlic, mince and let stand for 10 minutes.)
2 T. chopped cilantro
2 T. chopped parsley
1/2 t. curry powder
extra turmeric
pinch of salt
2T of either Udo’s Oil, flax-seed oil, or extra-virgin olive oil.
(Hint: White potatoes seem banned to dieters because they are considered a high glycemic index food. Combining a baked white potato with healthy oil slows the digestive process, lowering the glycemic index rating.)
Mix all ingredients in a bowl, cut baked potato in half, dip into the spiced oil, and enjoy your new finger food. Not into finger food? Okay, you can cut up your potato and add to dip and mix well.
Broccoli and Carrots
Want a wonderfully nutritious afternoon snack? Very lightly steam broccoli and/or whole carrots. I find 5 minutes on broccoli, 8 minutes for carrots (depending on thickness of carrots) is perfect. Do not cook till mushy!
Dip the broccoli and carrots into the same dipping oil described above. Powerful brain food snack!
This is also an easy way to preserve the nutritional value of the broccoli and carrots, and yet make it easier to chew for anyone, including seniors, who have problems chewing hard veggies.

Where is Curry Powder on the brain-healthy spice chart?
